A lot of work goes into this recipe but it is well worth the effort. Enjoy Ingredients:
1 cup wild rice |
1 medium white onion chopped |
2 large tomatoes |
2 large red bell peppers |
2 large yellow bell peppers |
1-1/2 cups freshly grated coconut |
2/3 cup almond yogurt |
2 teaspoons chili powder |
4 garlic cloves minced |
2 teaspoons ground coriander |
1 teaspoon ground brown mustard |
2 teaspoons lime zest |
1 lime juiced |
1 teaspoon sea salt |
Directions:
1. Soak rice for 3-6 hours then drain well and cook according to package directions then cool to room temperature. 2. When rice is ready finely chop the onion, tomatoes and peppers and grate the coconut. 3. Mix together in a large bowl and add in the rice. 4. In a separate bowl mix the almond yogurt, lime juice, lime zest, garlic, spices and seasoning. 5. Pour over the wild rice and vegetables and toss well. |
