Caribbean Shrimp Scallops And Peppers |

Made this one for our very first Buffet concert....yes, the virgin concert! This is a positively GORGEOUS dish! Not to mention absolutely scrumptious. Has Parrothead written all over it! Ingredients:
1 pound sea scallops, rinsed and drained |
1 pound large shrimp, peeled and deveined |
1 cup red bell pepper, diced (a mixture of red and yellow is really nice) |
3/4 cup red onion, minced |
3 tablespoons green onion, sliced |
1/3 cup orange juice |
2 tablespoons lime juice |
1 tablespoon extra virgin olive oil |
1 tablespoon jerk seasoning, or to taste |
1 tablespoon fresh basil leaves, minced |
Directions:
1. Heat oil in a skillet with high heat. Add scallops and sear until done on each side. Don't overcook. Put scallops in medium bowl and chill. Quarter scallops when chilled. 2. Saute shrimp in same pan until shrimp turn pink. Put in another bowl and chill. 3. Combine marinade ingredients (o. j. through jerk seasoning). Combine shrimp, scallops, veggies and pour marinade over all. Toss gently, cover & refrigerate at least an hour, but I like it done the day before to let the flavors marry nicely. |
