Of my forays into the world of cooking, this one has gotten the best response yet. :) Ingredients:
1 cup uncooked white rice |
2 cups water |
1 tbsp. oil (or butter) |
2 chicken breasts |
1/2 to 1 cup salsa |
1/4 cup mandarin oranges |
1/2 tbsp. brown sugar |
1 tbsp. lemon juice |
cinnamon |
nutmeg |
Directions:
1. Cook rice as directed. 2. Heat oil (or butter) in large skillet over medium-high heat until hot. Add chicken; cook and stir for 7 minutes, or until no longer pink. 3. In a medium-sized bowl, combine salsa, oranges, brown sugar, lemon juice, and spices; mix well. 4. Add salsa mix to chicken, stirring well. Bring to boil. Reduce heat to low; cover and simmer for 5 to 10 minutes, stirring occasionally. 5. Serve over hot cooked rice. |
