These are delicious. Very close to the ones you can get at the Caribbean Restaurant. Ingredients:
coconut oil or olive oil |
1 large onion, chopped |
16 ounces rice (uncooked) |
1 (16 ounce) can red beans (or kidney beans) |
16 ounces coconut milk |
16 ounces chicken stock |
1 tablespoon fresh thyme |
3/4 teaspoon allspice |
2 bay leaves |
3 scallions, chopped |
2 -3 garlic, minced |
1 scotch bonnet pepper, whole |
1 -2 teaspoon brown sugar |
salt, pepper |
Directions:
1. Add oil to a pan and add onions. When onions are soft, add rice. Stir. Cook for 1-2 minutes. 2. Then add rest of ingredients. Bring to a boil and simmer until rice is done. Keep checking and add water or more chicken stock if necessary. 3. Once done, pull out the bay leaves before serving. |
