Caribbean Pork With Mango Salsa

Ingredients:
1 fresh mango, peeled and diced
1/2 cup finely chopped poblano chile pepper
2 tablespoons frozen orange juice concentrate, thawed
2 tablespoons chopped fresh cilantro
1 tablespoon grated fresh ginger
1/2 teaspoon sugar
1/2 teaspoon ground allspice
1/2 teaspoon pepper
1/2 teaspoon salt
4 (4-ounce) boneless center-cut pork loin chops (1/2 inch thick)

Directions:
1. Combine first 6 ingredients in a medium bowl, and toss well. Cover and chill.
2. Combine allspice, pepper, and salt in a small bowl; mix well. Sprinkle evenly on one side of pork. Place a large nonstick skillet over medium-high heat until hot. Lightly coat pork with cooking spray. Cook pork, seasoned side down, 6 minutes or until lightly browned. Turn pork, and cook 6 to 7 additional minutes or until done. Serve with mango salsa.
