Caribbean Pork With Mango Salsa |

Ingredients:
1 fresh mango, peeled and diced |
1/2 cup finely chopped poblano chile pepper |
2 tablespoons frozen orange juice concentrate, thawed |
2 tablespoons chopped fresh cilantro |
1 tablespoon grated fresh ginger |
1/2 teaspoon sugar |
1/2 teaspoon ground allspice |
1/2 teaspoon pepper |
1/2 teaspoon salt |
4 (4-ounce) boneless center-cut pork loin chops (1/2 inch thick) |

Directions:
1. Combine first 6 ingredients in a medium bowl, and toss well. Cover and chill. 2. Combine allspice, pepper, and salt in a small bowl; mix well. Sprinkle evenly on one side of pork. Place a large nonstick skillet over medium-high heat until hot. Lightly coat pork with cooking spray. Cook pork, seasoned side down, 6 minutes or until lightly browned. Turn pork, and cook 6 to 7 additional minutes or until done. Serve with mango salsa. |
