Greatness greatness greatness. I obtained this recipe from a competitor in a chili cookoff, I won the blue ribbon, but I honestly thought this one was far better than my entry. This one got honorable mention. Ingredients:
2 pounds lean pork cut into 1/2 cubes |
1 cup orange juice |
1/2 cup lime juice |
1/2 cup lemon juice |
1/4 cup olive oil |
6 cloves garlic chopped |
4 large white onions sliced |
4 green bell peppers chopped |
2 tablespoons ground cumin |
1 tablespoon fresh oregano |
1/2 teaspoon cloves |
2 jalapeno peppers chopped |
1/4 cup golden raisins |
1/2 cup water |
32 ounces canned caribbean flavored black beans undrained |
32 ounces canned black beans drained |
Directions:
1. Marinate pork in orange, lime and lemon juices overnight. 2. Drain off marinade then sauté in olive oil until browned. 3. Transfer to crock pot and add remaining ingredients. 4. Stir once then cook for 6 hours on high. |
