A nice light caribbean dessert .....it is very good ..i had it in the virgin islands at a restaurant there........ hope you .enjoy it !!!!! courtesy caribbean party book Ingredients:
4 - egg whites |
-a - pinch of cinnamon or more if you like |
1 - dash orange extract |
3 - medium ripe papayas |
4 - tablespoons of flour |
4 - tablespoons of sugar |
2 - teaspoons of lime juice |
1/2 - teaspoon of lime zest |
1 - medium sweet pre- baked pie shell |
Directions:
1. First pick out all seeds from papayas then 2. coarsely mash the papayas. 3. Add lime juice, zest, cinnamon right along with the orange 4. extract. 5. Now fold in the flour and sugar. 6. Beat the egg whites until they are nice and stiff, fold right into the mixture. 7. Bake it for about 25 minutes until the top 8. is just brown. 9. Transfer the pie right into the refrigerator and serve chilled. 10. Enjoy |
