CARIBBEAN KIWI SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Chiles Estate in Brennan, Texas in 1996. Ingredients:
2 cups pineapple chunks drained and chopped |
2 yellow or red bell peppers seeded and chopped |
3 kiwifruit peeled and chopped |
1 small red onion finely chopped |
1/4 cup fresh cilantro leaves finely chopped |
juice of 1 lime |
1/8 teaspoon cayenne pepper |
Directions:
1. Combine pineapple chunks, bell peppers, kiwifruit, onion, cilantro, lime juice and cayenne. 2. Toss thoroughly and serve with fish or chicken. |
