This takes a little effort - not difficult, just a lot of dicing - but it's worth it. I serve with Chicken Roti. Make ahead of time; let flavors mingle at least two hours. Ingredients:
1 mango, peeled and diced |
1 papaya, peeled and diced |
1 red pepper, diced |
1 green pepper, diced |
1 cup fresh pineapple, diced |
1 small red onion, diced |
3 tablespoons fresh cilantro, chopped |
2 tablespoons fresh lime juice |
1 tablespoon olive oil |
Directions:
1. Combine all ingredients, stir. Cover and chill at least 2 hours. |
