Caribbean Fish Burger (Perricone) |

Fish burger with lots of spices. Perricone diet! Good with or without buns. Ingredients:
18 ounces raw salmon, chopped |
1/2 cup red onion, minced |
1 egg white |
2 tablespoons fresh ginger, minced |
1 1/2 teaspoons fresh garlic, minced |
1 teaspoon ground coriander |
3/4 teaspoon ground cumin |
1/4 cup fresh cilantro leaves, chopped |
1 tablespoon fresh lime juice |
1 tablespoon lime peel, grated |
1 tablespoon olive oil |
3 -4 whole grain buns (optional) |
1 1/2 cups baby greens |
1 lime, cut into wedges |
Directions:
1. combine salmon, egg, and spices. Form into patties. 2. Saute in olive oil until golden brown. Approx 6-7 minute. 3. Arrange greens, place burgers on greens, garnish with lime wedges. |
