Caribbean Cowpeas and Rice |

Ingredients:
1 cup black-eyed peas, rinsed and drained |
1 onion, chopped |
1 jalapeno, seeded and minced |
2 garlic cloves, minced |
1/2 teaspoon cumin |
1 teaspoon thyme |
1 bay leaf |
1 cup long-grain rice |
1 cup vegetable broth |
1/2 cup tomato, crushed |
1/2 cup allspice |
1/2 teaspoon salt |
Directions:
1. Soak peas. 2. COmbine peas with onion, jalapeno, garlic, cumin, thyme, bay leaf and 2 cups water. 3. Boil. 4. Reduce and simmer. 5. Add rice, broth, tomato, allspice and salt. |
