I am not sure where this recipe comes from but it is one I cannot get enough of. I make it all summer long when the corn is fresh and plentiful. It is so tasty and goes great with just about everything. I have even put leftovers in cornbread the next day and you talk about tasty. Read more . Yummers Ingredients:
vegetable cooking spray |
3 cups corn cut from cob |
1 clove garlic minced |
3 tablespoons unsweetened pineapple juice |
3 tablespoons skim milk |
1-1/2 teaspoons soy sauce |
1/2 teaspoon sugar |
1/2 teaspoon ground cumin |
1/4 teaspoon ground ginger |
1/4 cup sliced green onions |
Directions:
1. Coat a large skillet with cooking spray then place over medium heat until hot. 2. Add corn and garlic then sauté 5 minutes. 3. Combine pineapple juice and next 5 ingredients then add to corn. 4. Cover then reduce heat and simmer 15 minutes stirring occasionally. 5. Add green onions then cover and cook an additional 5 minutes. |
