Caribbean Chicken With Veggies |

Not sure that this is actually Caribbean chicken, but that's what it was called when I received the recipe. It's very good and fairly healthy. I am adding it so that I don't forget it. I hope that you enjoy. Ingredients:
1 zucchini |
1 yellow squash |
1 -2 tablespoon olive oil |
4 chicken breasts |
1 garlic clove |
1 (8 ounce) can tomato juice |
1 (16 ounce) jar salsa |
ground cumin, to taste |
Directions:
1. Grate zucchini and squash and set aside. 2. In a small skillet heat olive oil. 3. When oil is hot, add chicken breasts. 4. Saute for about 5 minutes on 1 side. 5. Adding garlic to pan and flip chicken. 6. When chicken is done, remove from heat to a separate plate with garlic. 7. Heat salsa with tomato juice to a simmer. 8. Once salsa mixture begins to simmer, add cumin to taste, turn heat to low. 9. Saute grated vegetables for about 1 minute. 10. Serve chicken on bed of grated vegetables with salsa mixture on top. |
