Another great way to use up leftover chicken. This is an awesome salad recipe that is loaded with fruity flavors. The raspberries and papaya really bring out unique flavors and the peanuts give it a nice crunch. Read more . Enjoy Ingredients:
1/2 cup peanuts |
1/2 cup mayonnaise |
1/4 cup chutney |
2 tablespoons sugar |
2 tablespoons raspberry vinegar |
1 teaspoon curry powder |
1 head romaine lettuce torn in pieces |
1/2 cup sliced green onions |
1 cup shredded grilled chicken |
1 papaya halved seeded peeled and sliced |
1 cup fresh raspberries |
1/2 cup peanuts |
Directions:
1. In blender combine peanuts, mayonnaise, chutney, sugar, vinegar and curry. 2. Blend until smooth then set aside. 3. Toss lettuce with green onions and divide among serving plates. 4. Top with chicken, papaya slices and raspberries then sprinkle with peanuts. 5. Serve with dressing. |
