1 1/4 lbs chicken breasts |
1 lime, rind |
2 tablespoons lime juice |
1 tablespoon rum or 1 tablespoon sweet sherry |
1 tablespoon light muscovado sugar |
1 teaspoon ground cinnamon |
2 mangoes, peeled and diced |
cooked rice, for serving |
Directions:
1. Cut the chicken in bite-sized chunks and place in a bowl with the lime, rum, sugar and cinnamon. 2. Toss well and let stand for 1 hour. 3. Save the juices and thread the chicken onto four wooden skewers, alternateing with the mango cubes. 4. Cook under a hot grill or barbecue for 8-10 minutes, until the chicken is tender and golden brown. 5. Serve with rice. |
