Caribbean Chicken

A light easy slightly spicey meal. Great with a nice white wine and a warm summer day. Chicken can be made indoors on a broiler, but tastes better on a grill.
Ingredients:
4 chicken breasts
2 tablespoons season salt
1 tablespoon onion powder
15 ounces peaches
15 ounces pears
3 tablespoons brown sugar
2 tablespoons butter
1 teaspoon dried basil
tabasco habanero sauce
3 cups cooked white rice
Directions:
1. Make rice according to package directions. Jasmine rice worked the best so far for me.
2. Pound out chicken breasts to 1/2 inch thickness, season both sides with season salt and onion powder. Place on grill.
3. In sauce pan place butter to melt. Add brown sugar, peaches, pears and basil. Bring to a boil then simmer on meduim to medium high heat for 10 to 15 minutes.
4. Place rice on plate, place chicken on top of rice and pour sauce with fruit on top. Add tabasco to taste.
