This is a very simple recipe that I got out of a hurry-up chicken recipe book. I love the flavor of tarragon, so that made this one a winner for me! Ingredients:
1/4 cup butter |
2 whole chicken breasts, halved |
1 teaspoon salt, divided |
1/2 teaspoon dried tarragon leaves, divided |
2 tablespoons lime juice |
2 tablespoons water |
1/2 teaspoon tabasco sauce |
hot cooked rice (i use jasmine) |
Directions:
1. Heat Butter in skillet. 2. Add chicken breasts skin side down. 3. Sprinkle with 1/2 salt and 1/2 tarragon. 4. Cook over medium heat until browned, about 10 minutes. 5. Turn chicken breasts. 6. Sprinkle with remaining salt and tarragon. 7. Cook until brown, about 10 more minutes. 8. Combine lime juice, water and tabasco sauce. 9. Pour over chicken. 10. Cover and simmer 10 minutes longer or until chicken is tender. 11. Serve over hot cooked rice. |
