This is an awesome dish. This recipe comes from a coworker who brought these to a potluck and had everyone begging for the recipe. Very unusual and loaded with wonderful flavors. Ingredients:
1-1/2 chopped onions |
3 garlic cloves chopped fine |
2 tablespoons olive oil |
1 tablespoon fresh grated ginger root |
1 teaspoon fresh thyme |
1/2 teaspoon ground allspice |
4-1/2 cups drained cooked black beans |
3/4 cup orange juice |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Sauté onions and garlic until barely soft then add spices and sauté until very soft. 2. Stir in beans and orange juice then sauté 15 minutes stirring occasionally to prevent burning. 3. Mash a few of the beans with a fork then add salt and pepper. |
