Cardamom Coffeecake From Norway |

Typical Norwegian/Scandinavian coffeecake. Ingredients:
10-12 vanilla wafer cookies, crushed into crumbs |
1-3/4 cups flour |
1 teaspoon baking soda |
1 cup sugar |
1 stick (1/2 cup) unsalted butter |
3 eggs |
2 teaspoons ground cardamom |
1/2 teaspoon ground cinnamon |
2/3 cup sour cream |
confectioners' sugar |
Directions:
1. Heat oven to 350 degrees. 2. Grease a 9-inch tube or bundt pan with butter. 3. Dust with cookie crumbs. 4. Set aside. 5. Combine flour and baking soda in small bowl. 6. set aside. 7. Place sugar and butter in bowl of electric mixer. 8. Beat until light and fluffy, 3 minutes. 9. Add eggs, one at a time, beating after each addition, about 5 minutes total. 10. Beat in cardamom and cinnamon. 11. Add flour mixture. 12. Beat until just combined. 13. Add sour cream. 14. Beat until smooth, approximately 1 minute. 15. Pour batter into pan. 16. Bake until toothpick inserted in center of cake comes out clean, about 50 minutes. 17. Let stand 5 minutes. 18. Turn onto a wire rack. 19. Cool completely. 20. Dust with confectioners' sugar. 21.
