This treat was inspired by my love of both Cardamom and Almond. They are chewy and light and fill the house with a delightful aroma. A sure hit around here in this Little Norway town. Be sure to use fresh ground Cardamom for the best flavor. Ingredients:
1/2 cup butter, softened |
1 cup flour |
1/2 cup oil |
2 cups granulated sugar (divided) |
1 teaspoon baking powder |
3 eggs |
8 ounces almond paste |
2 eggs |
1 teaspoon almond extract |
2 teaspoons ground cardamom |
Directions:
1. preheat oven to 350. 2. cream together butter, flour, oil, 1 cup sugar, baking powder and first three eggs. 3. Set aside. 4. In another bowl cream together Almond Paste, 1 cup sugar, 2 eggs, almond extract and cardamom. 5. Mix the two together the two mixtures and spread into a greased 9x13 pan. 6. Bake for 30-45 minutes or until toothpick inserted comes out clean. 7. Once cooled cut into squares & enjoy. |
