These deviled eggs are from Rachael Ray - I've modified the recipe slightly as I added mustard and used pre-cooked bacon bits instead of frying up 1/4lb. pancetta as she did. This is a delicious and low carb way to enjoy deviled eggs! Ingredients:
12 hard-boiled eggs |
1/4 cup bacon bits |
1 garlic clove, minced |
1/4 cup parmesan cheese |
1/4 cup mayonnaise |
1 teaspoon yellow mustard |
3 teaspoons hot sauce |
1 teaspoon black pepper |
2 tablespoons dried parsley or 2 tablespoons fresh parsley |
Directions:
1. Cut eggs in half the long way. 2. Scoop out the yolk, reserve the whites. 3. Mash the yolks and remaining ingredients together until smooth. 4. Fill the egg whites with the filling. 5. Serve. |
