This recipe is often served over rice. Ingredients:
1 1/2 lbs beef, broiled and cut into cubes |
3 cups water |
1 teaspoon cider vinegar |
1/2 teaspoon salt |
1 bay leaf |
1/2 teaspoon ground cumin |
6 peppercorns |
1 garlic, glove crushed |
4 celery ribs, sliced |
1 medium tomato, diced |
1/2 cup peeled and cubed carrot |
1 ounce onion, chopped |
1/2 teaspoon oregano |
4 medium apricots, cut into halves and pitted |
4 medium plums, quartered and pitted |
Directions:
1. Place meat in saucepan with water, vinegar, salt, bay leaf, cumin, peppercorns and garlic. 2. Cover and simmer slowly for about one hour. 3. Add celery, tomato, carrots, onion and oregano. Stir to combine. 4. Add fruit. Cover and cook until fruits are tender. |
