2 1/2 cups cornmeal |
1 1/2 teaspoons baking powder |
1 teaspoon salt |
1 teaspoon shortening, melted |
boiling water |
oil (for frying) |
Directions:
1. Put cornmeal, baking powder, salt, and melted shortning in a mixing bowl. 2. Add enough boiling water until you have a thick mushy consistency. (Water MUST be boiling.). 3. Set aside until cool enough to handle the mixture in your hands. 4. Heat frying oil until very hot. 5. Drop in hand formed flat patties, and fry until light brown. 6. Remove to drain and cool. |
