CARAMELIZED SWEET ONIONS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lowery Estate in Arlington, Texas in 1984. Ingredients:
2 tablespoons butter |
1 teaspoon olive oil |
2 large sweet onions peeled and sliced 1/4 thick |
1/2 teaspoon dried thyme crushed |
1/2 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
2 tablespoons light brown sugar |
3 tablespoons fresh lemon juice divided |
Directions:
1. In large heavy skillet heat butter and oil over medium low heat. 2. Add onions, thyme, salt and pepper then sauté slowly 15 minutes stirring occasionally. 3. Add brown sugar and 2 tablespoons lemon juice then sauté 5 minutes. 4. Stir in remaining tablespoon lemon juice and continue cooking 5 minutes. |
