The caramelized coating on the pork is created by sprinkling it with sugar before pan-frying. The vinegar and ketchup give you a very quick sweet and sour finish. Add a splash of tabasco and worcestershire sauce to the pan with the ketchup if you wish to spice up the sauce. This dish also works well with chicken breasts or legs. Ingredients:
4 pork chops |
2 teaspoons granulated sugar |
1 tablespoon peanut oil |
2 tablespoons malt vinegar |
2 tablespoons tomato ketchup |
4 tablespoons water |
salt & freshly ground black pepper |
Directions:
1. Preheat the oven to 400°F Season the pork with salt and pepper then sprinkle on both sides with the sugar. 2. Place a small roasting tin or ovenproof frying pan over a high heat. Add the oil and the pork to the pan and cook for about 5 minues, turning now and then until dark golden all over. 3. Transfer the chops in the pan to the oven. Cook for 12-15 minutes. 4. Remove the pan from the oven and place over a high heat once more. Remove the meat and add keep warm. Add the vinegar to the pan - this will boil and reduce very quickly. 5. Add the tomato ketchup and water and stir. 6. Pour the sauce over the chops and serve. |
