Same idea as caramelized (candied) apples and just as scrumptious. The recipe came from a magazine with typical recipes of the Mexican state of Tabasco. Ingredients:
4 plantains, peeled |
1/4 cup cooking oil |
2 cups sugar |
1/2 tablespoon vinegar |
Directions:
1. Cut peeled plantains in thick wedges or slices. 2. Fry plantain in hot cooking oil for 2 minutes, drain, and set apart. 3. Mix sugar and vinegar and cook on stovetop to hard ball stage. 4. Dip plantains in cooked syrup or pour syrup over them. 5. Let cool and serve. |
