Caramelized Onions Tartlets |

These creative appetizers are sweetly savory and perfect for passing around. Ingredients:
1 teaspoon olive oil |
2 cups minced sweet onions |
2/3 cup dannon oikos plain greek nonfat yogurt |
2 tablespoons parmesan cheese, or to taste |
1 tablespoon chopped chives or parsley |
Directions:
1. In a saute pan heat oil. Add onions and cook on medium heat, stirring often, until onions are golden brown (15 minutes). Let onion cool. 2. In a bowl combine, yogurt, parmesan cheese and herbs mix well. Add cooled onions. 3. Spoon 1 healthy teaspoon per phyllo cup and bake tartlets 10 minutes or until golden brown. |
