Caramelized Onion Mashed Potatoes |

Ingredients:
2 teaspoons olive oil |
1 1/2 cups prechopped onion |
1 1/2 pounds chopped peeled baking potatoes |
1/2 cup fat-free buttermilk |
2 tablespoons butter |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. Heat olive oil in a large skillet over medium-high heat. Add onion; sauté 15 minutes or until golden. Place potatoes in a saucepan; cover with water, and bring to a boil. Cover, reduce heat, and simmer 15 minutes or until tender; drain. Stir in buttermilk, butter, salt, and black pepper; mash with a potato masher. Stir in onion. |
