Great as a topping on bagel or pita chips, this spread also makes a tasty substitute for traditional tomato sauce on your favorite homemade pizza. Ingredients:
cooking spray |
2 teaspoons olive oil |
1 1/2 cups chopped onion |
1/2 teaspoon dried thyme |
1 (19-ounce) can cannellini beans, rinsed and drained |
1/4 cup chicken or vegetable broth |
1 tablespoon lemon juice |
1/2 teaspoon bottled minced roasted garlic |
1/4 teaspoon salt |
1/4 teaspoon worcestershire sauce |
1/8 teaspoon freshly ground black pepper |
chopped fresh chives (optional) |
Directions:
1. Heat oil in a nonstick skillet coated with cooking spray over medium heat. Add onion and thyme; cook 10 minutes or until golden brown, stirring frequently. 2. Combine beans and next 6 ingredients in a food processor; add onion mixture, and pulse until coarsely pureed. Garnish with chives, if desired. |
