Caramelized Onion And Mushroom Pizza |

A yummy, yummy topping for this vegetarian pizza of mushrooms, onions, rosemary etc. Ingredients:
salt and pepper |
1 tbsp rosemary , fresh, chopped |
2 tbsp parmesan cheese , grated |
1 onion , large size, cut into rings |
1-2 garlic cloves , chopped |
1 cup mozzarella cheese , shredded |
2 tbsp balsamic vinegar |
4 tbsp olive oil |
1 1/2 cups mushrooms , sliced |
1 favorite pizza dough recipe or use a premade boboli type of pizza crust |
Directions:
1. In a skillet, heat 2 tbsp oil over medium heat. 2. Add garlic, mushrooms and stir for 1 minute. 3. Rub onion slices to get onion rings. 4. In another skillet, heat remaining oil over medium heat. 5. Add onion rings and stir-fry until golden brown (10-12 minutes). 6. Add vinegar and cook for another minute. 7. Add salt and pepper. 8. Roll dough on a slightly floured surface. 9. Spread dough to cover a 30 cm diameter baking sheet or pizza pan or its equivalent rectangular baking sheet. 10. Add mushrooms and caramelized onions. 11. Sprinkle rosemary then mozzarella and Parmesan cheese. 12. Heat oven to 425-450F 13. Bake pizza in oven for 10-15 minutes. 14. Serve immediately. |
