My daughter likes to help with these - at age 12 the microwave candy is much safer than the stovetop alternatives. Ingredients:
26 caramels |
1 cup milk chocolate chips |
1/4 cup heavy whipping cream |
1 1/3 cups semisweet chocolate chips |
1 tbsp shortening |
Directions:
1. Line an 8-in square pan with saran wrap and set aside. 2. Combine caramels, milk chocolate chips and cream in microwaveable bowl. 3. Microwave uncovered on high for 1 minute then stir. 4. Microwave for 1 minute longer, stirring every 15 seconds or until caramels are melted and mixture is smooth. 5. Spread mixture into plastic-coated pan and refrigerate until firm, about 1 hour. 6. Cut chilled candy into 30 pieces and roll each into a ball. 7. Melt semi-sweet chips and shortening in the microwave, stirring frequently, until smooth. 8. Dip caramel balls in chocolate and place on waxed paper. 9. Refrigerate until firm. |
