I think I got this from the Penzey's spices catalog. I wish I knew how to put the picture on here , too, so you-all could see how pretty it looks!!! ;) Ingredients:
8 large tomatoes, peeled and cored |
1 c light brown sugar |
1 t salt |
1 t pepper |
4 t unsalted butter, cut in small slices |
Directions:
1. arrange tomatoes in a large oven-proof skillet, cored side up. 2. sprinkle with sugar, salt and pepper. 3. dot with butter. 4. Bake until tomatoes are tender and lightly browned, about 1 hour, basting with juices about every 15 min. 5. Transfer skillet to stove-top. Simmer over low heat basting every 5 min until sauce is thick and syrupy. about 25 min. 6. 400 degrees |
