This is a family favorite. The first time I ever made it, I accidentally used a plastic spoon to stir the sugar mixture, and as it melted, I noticed little white bits of plastic floating in the pan. Needless to say, everyone had a pretty good laugh at me. My advice, then, is to use a wooden spoon or something else that does not melt! You have been warned... =) Ingredients:
1 cup sugar |
4 -5 cups water |
1 cup sugar |
2 cups flour |
4 teaspoons baking powder |
1 pinch salt |
1 cup water |
1 tablespoon shortening |
1 cup raisins |
1 teaspoon vanilla |
Directions:
1. Spread sugar in frying pan and stir until caramelized. 2. Add the water and simmer until sugar and water form a caramel sauce. 3. Meanwhile, boil the raisins with the water and the shortening. 4. Mix the first four ingredients together. 5. Add the vanilla to the raisin mixture, and then add this to the flour mixture. 6. Stir together. 7. Put sauce in 9x13 pan and add the batter by spoonfuls over the top. 8. Bake at 350ยบ till warm and bubbly, approximately 30 minutes. 9. Serve with whipped cream or ice cream over the top.
