I very fondly remember my Granny cooking these. And I actually have no idea how many people it serves because we always ate them as fast as we could. Ingredients:
waxed paper or deep baking trays |
butter |
4-5 cups chopped pecans |
2 cups sugar |
1 cup light karo or other corn syrup |
1/4 tsp salt |
16 oz. cream |
Directions:
1. Spread several sheets of waxed paper on table or cabinet; butter the paper, then sprinkle pecans over it. Or butter the baking trays and sprinkle nuts in them. (You'll need more nuts for the waxed paper method.) 2. Mix sugar, syrup, salt, and half of cream. Stir mixture until it boils then turn down heat. 3. Add remainder of cream and cook slowly, stirring constantly, until mixture forms a firm ball in cool water. 4. Pour mixture over pecans in trays, or on waxed paper. 5. Cover with more waxed paper, if using. 6. Cool completely and cut into pieces. |
