Cooks Illustrated has found a way to make caramel in the microwave and shared it in the March 2011 issue. Very easy to do! Ingredients:
1 cup sugar |
2 teaspoons corn syrup |
2 tablespoons water |
1/8 teaspoon lemon juice |
Directions:
1. Mix all ingredients in 2 cup microwave-safe measuring cup or glass bowl. 2. Microwave at full power until mixture is just beginning to brown (this can be from 5 to 8 minutes depending on your microwave). 3. Remove from microwave and let it sit on a dry surface for 5 minutes or until it darkens to a rich honey brown. 4. To make caramel sauce, add 1/2 cup of hot heavy cream a few Tablespoons at a time, followed by 1 Tablespoon of butter. |
