This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Harrelson Estate in Detroit, Michigan in 1984. Ingredients:
1-3/4 cup sugar |
3 egg whites |
8 egg yolks |
2 cans evaporated milk |
2 teaspoons vanilla |
6 tablespoons brandy or rum |
Directions:
1. Preheat oven to 350. 2. Pour 1 cup sugar in greased flan or baking pan. 3. Place in oven until sugar melts and turns golden tipping pan to coat sides. 4. Let cool. 5. Meanwhile make custard by beating together egg whites and egg yolks. 6. Add milk, remaining sugar and vanilla then beat until sugar is dissolved. 7. Pour custard into flan pan then place pan in larger pan containing 1 inch hot water. 8. Bake 1 hour or until firm. 9. Chill well before serving. 10. Heat brandy then pour over flan and ignite. |
