Ingredients:
3/4 cup vanilla light soy milk
2 tablespoons fat-free caramel topping
6 ounces light silken tofu, drained and chilled
1 (.93-ounce) packet iced coffee-flavored instant coffee
1 1/2 cups ice cubes
Directions:
1. Place first 4 ingredients in a blender; process until smooth. Add ice cubes, a few at a time; process until thick.
