A perfect marriage of caramel, cookies and snacktime! Ingredients:
125g butter |
1/4 cup (55g) caster sugar |
1 cup (150g) plain flour |
2 tbspns cornflour |
caramel filling |
20g butter |
3 tspns golden syrup or another heavy syrup-try maple |
1 tspn glucose syrup |
2 tspns brown sugar |
1/4 cups (85g) sweetened condensed milk |
Directions:
1. Preheat oven to modeate (180degC) or 160degC fan forced. Grease 2 oven trays 2. Caramel Filling: 3. Combine all ingredients in a small saucepan. 4. Stir over low heat til the mixture has thickened. Remove from heat 5. Cookies: 6. Beat butter and sugar in small bowl til light and fluffy 7. Stir in sifted flours and knead lightly til smooth 8. Roll heaped teaspoons of mixture into balls. Place 3 cm apart on tray 9. Flatten slightly, and then make an indent in the top of each with your thumb 10. Divide the caramel filling among the holes in the tops of the cookies 11. Bake for 15 mins or until browned slightly. Cool on tray |
