This is a recipe from the local chapter of the Bellsouth Pioneers cookbook. I took it to a potluck at work one day and there was not a bite left over! It is really delicious and will last for several days in your refrigerator. Ingredients:
1 (8 ounce) can crushed pineapple, undrained |
2 tablespoons all-purpose flour |
2 tablespoons vinegar |
1/2 cup sugar |
4 granny smith apples, unpeeled and chopped |
1 cup peanuts, crushed |
16 ounces whipped topping |
Directions:
1. Combine the pineapple, flour, vinegar and sugar in a heavy saucepan. Bring to a boil, stirring constantly, until mixture becomes very thick. Remove from heat and let cool completely. Fold the apples, peanuts and whipped topping into the pineapple mixture. Cover and chill overnight or up to three days. |
