Caramel Apple Bread Pudding

Got this recipe from a hospital kitchen employee, it is good. Wanted to keep it safe
Ingredients:
28 caramels, unwrapped
1/4 cup water
4 cups bread, cubed, i use biscuits sometimes
4 cups apples, peeled and sliced
5 eggs, slightly beaten
2 cups milk
1/4 cup sugar
1 tablespoon vanilla
1/4 teaspoon salt
1/4 teaspoon cinnamon
Directions:
1. Melt caramels with water in a covered double boiler or a sauce pan over low heat.
2. Stir occasionally until sauce is smooth.
3. Place bread cubes in a greased 113/4 X 7-1/2 Baking dish.
4. Top with apple slices.
5. Combine Milk, suga, vanilla, salt and cinnamon.
6. Pour over apples, cover with caramel sauce .
7. Set dish in a large pan on oven rack, pour in boiling water to 1/2 inch in depth.
8. Bake at 325*for 1 hr and 20 minute or untol knife inserted in center comes out clean.
9. Serve hot or cold.
10. NOTE: I sometimes add pecan pieces or raisins for a change.
