You'll love the Caramel apple taste in this big pancake for 4 or maybe just 2 . lol From Pancake Recipe Club on the Net. Ingredients:
5 tbsp. butter |
6 tbsp. brown sugar |
1/4 tsp. cinnamon |
1 cup baking apples; thinly sliced (1-2 apples) |
1 cup flour |
1 tbsp. sugar |
1 tsp. baking powder |
1/2 tsp. baking soda |
dash salt |
1 cup buttermilk |
1 egg |
3 tbsp. melted butter |
Directions:
1. Preheat oven to 400F. Spray 9-inch pie pan or baking dish with nonstick 2. spray. 3. In small saute pan, melt butter and add brown sugar. Cook on medium high 4. until sugar melts, about 4 minutes, stir in cinnamon. Pour caramel into a prepared 5. pan. Slice apples with apple slicer and quarter, now arrange apple slices evenly on top of the caramel. Set aside. 6. In medium bowl measure flour and add sugar, baking powder, baking soda and salt. Sift together. Add buttermilk and egg and whisk until blended. 7. Stir in melted butter. Pour onto caramel and apples in the pan covering 8. evenly. 9. Bake for 25 minutes or until golden brown on edge. Remove from oven and 10. let sit 11. for 10 minutes. Invert onto aserving dish. Serves 4. |
