Carambola-Glazed Barbequed Chicken |

Carambola is also known as star fruit . In this recipe it flavors a handsome glaze for the chicken. From The Sugarmill Caribbean Cookbook . Ingredients:
2 (3 1/2 lb) roasting chickens, quartered |
1 cup vegetable oil |
3/4 cup white wine vinegar |
1/2 cup dry sherry |
1 teaspoon minced garlic |
1/2 teaspoon poultry seasoning |
2 teaspoons caribbean seasoning (see my recipe for caribbean seasoning) |
2 carambolas, sliced |
1/4 cup lime juice |
1/4 cup honey |
2 tablespoons white wine vinegar |
1 tablespoon soy sauce |
1 tablespoon minced garlic |
1 dash hot pepper sauce |
3 -4 carambolas, sliced |
Directions:
1. Place chicken quarters in shallow dish. 2. In a bowl, stir together oil, vinegar, sherry, garlic, and poultry seasoning, and 1 teaspoons of Caribbean seasoning. 3. Pour off 1 cup of this mixture, and set it aside. 4. Pour the rest of the mixture over the chicken. 5. Cover and refrigerate for 2-3 hours. 6. Prepare grill. 7. Put the carambolas into a blender or food processor. 8. Add lime juice,honey,vinegar,soy sauce, garlic, hot pepper sauce, and remaining 1 teaspoons Caribbean seasoning. 9. Whirl until the mixture is smooth, stopping to scrape down sides. 10. lend in the reserved marinade. 11. Grill over medium coals for 30 minutes,turning occasionally and basting with the carambola mixture after every turn. 12. The chicken is done when it reaches 170* on a meat thermometer. 13. Allow to stand 10 minutes before serving. |
