Captain's Club With Shrimp and Chipotle Mayonnaise (+ Healthy Va

Easy healthy fix: Use turkey bacon, low-fat mayo, and two slices of whole-wheat bread or stuff into a whole-wheat pita
Ingredients:
12 slices bread, toasted
8 ounces bacon, cooked
1 lb bay shrimp, cooked
2 stalks celery, diced
1/2 cup mayonnaise
1/2 teaspoon chipotle chili pepper
1 tablespoon lime juice
1 tablespoon fresh cilantro, chopped
2 tomatoes, sliced
1 avocado, peeled and sliced
sea salt
fresh cracked black pepper
Directions:
1. Combine shrimp, celery, mayo, lime juice and cilantro. Season with salt and pepper.
2. Top one slice of toast with 1/4 c shrimp mixture and 3 tomato slices. Place slice of toast on top.
3. For captain club: Add 1/4 c shrimp mixture, 2 avocado slices, 2 slices bacon and another slice of toast.
4. Repeat for each.
