This calls for tuna, but I like it with chicken too. Ingredients:
1 1/3 cups rice, cooked |
1/2 teaspoon oregano |
1/2 teaspoon pepper |
16 ounces diced tomatoes (drain and reserve 1/2 c juice) |
1 cup water |
1/2 cup chopped onion |
2 cans tuna (or chicken) |
1 can condensed golden mushroom soup |
1/2 can milk |
2/3 cup shredded cheddar cheese |
1 cup crushed potato chip |
Directions:
1. Combine rice, oregano and pepper in 1 1/2 qt greased casserole. 2. Stir tomato juice and water into rice. 3. Stir in tomatoes, onion and tuna. 4. Mix soup, milk, and cheese. 5. Heat until smooth. 6. Pour over tuna. 7. Top with potato chip crumbs. 8. Bake at 375* for 20 minutes. |
