Caprial Acorn Squash Soup |

from Cooking with Caprial Ingredients:
3 tabs olive oil |
1 onion, diced |
3 garlic cloves, diced |
2 cups apple juice |
1/4 cup white vinegar |
9 cups broth |
2 bay leaves |
2 teaspoons thyme |
1 teaspoon sage |
1 teaspoon marjoram |
2 teaspoons chili sauce |
1 medium acorn squash |
1 tab brown sugar |
Directions:
1. Saute' onion and garlic in olive oil. Add rest simmer till squash is tender this recipe originally called for sherry I sub;d apple juice and vinegar, I also add 1 cup wild rice sometimes. I have also used sweet potato cause it is easier to prep than the squash. |
