A wonderful salad anytime, yet even more so in the Summer. Ingredients:
5 ounces fresh mozzarella, sliced |
2 large vine-ripened tomatoes |
roasted red peppers; cut into 1 slices |
roasted yellow peppers; cut into 1 slices |
2 t. fresh basil, julienned |
10 fresh basil leaves |
1 t. olive oil |
1 t. chopped garlic |
1/2 t. oregano |
salt, to taste |
cracked black pepper, to taste |
Directions:
1. On large platter, lay sliced mozzarella down center. 2. Place tomato wedges on one side of platter and alternating red and yellow roasted pepper slices on the other side. 3. Mix together olive oil, garlic and oregano and drizzle over entire platter. 4. Sprinkle with salt and pepper to taste. 5. Garnish with chopped fresh basil and fresh basil leaves |
