A classic Italian combination of basil, tomato and fresh mozzarella, with the added bonus of caramelized onions. This fragrant pizza will leave your mouth watering, but it's easy on the fat and calories also. Ingredients:
1 (14 1/2 ounce) can diced tomatoes, well drained |
1 1/2 teaspoons basil leaves |
1/4 teaspoon garlic powder |
1/4 teaspoon ground black pepper |
1 medium onion, thinly sliced |
1 teaspoon sugar |
1/2 cup mozzarella cheese (miniature mozzarella balls, cut in half) |
1 (12 inch) pizza crusts |
fresh basil (optional) |
Directions:
1. Preheat oven to 450°F Mix tomatoes, basil, garlic and pepper; set aside. 2. Spray nonstick skillet with cooking spray. Heat skillet on medium-high heat. Add onions; reduce heat to medium. Cool and stir 5-7 minutes until tender, stirring occasionally. Use additional cooking spray if needed. Add sugar and salt; cook and stir 1 minute or until onions are caramelized. 3. Spread tomato mixture over pizza leaving a 1-inch border. Top with onions, and cheese. 4. Bake 8-10 minutes. Let stand 2 minutes. Top with fresh basil, if desired. Cut into 6 slices to serve. |
