I invented this recipe becaue I love caprese salad, but wanted something more filling. It can also serve about 10 as a side dish. Feel free to increase or decrease any ingredients, depending on your taste. Ingredients:
1 pound penne pasta (this can be increased if you have many guests, or decreased if you want more intense flavour. |
6 ripe roma tomatoes, insides removed (cherry tomatoes will work, but it is more labour intensive to remove the insides.) |
3/4 pound fresh mozarella |
3/4 hard salami |
1 bunch basil, chopped roughly |
salt and pepper to taste |
Directions:
1. Boil pasta per instructions on package. 2. While pasta is boiling, cut tomato, salami, and mozarella into bite-sized pieces. 3. When pasta is cooked, drain and coat lightly with extra virgin olive oil or butter. 4. Add all ingredients to pasta, toss, and serve warm. |
