Caprese Inspired Pasta Salad |

Just a very simple salad to take to summer cook outs or BBQs. Even if you prepare the pesto from scratch, this still comes together in the time it takes the pasta to cook! Olives could be added to this, but it will lose a bit of the caprese feel, that way! Read more ! Ingredients:
1lb tri colored rotini |
1/4 cup prepared pesto |
juice from 1/2 lemon |
1lb cherry tomatoes, quartered, or grape tomatoes, halved |
1/2 red onion, diced |
about 8-10oz fresh mozzarella, cubed |
2t quality olive oil |
kosher or sea salt and fresh ground pepper |
Directions:
1. Toss diced onion in lemon juice and let rest while preparing rest of the salad. 2. Cook pasta per package directions and drain and toss to keep from sticking. 3. In large bowl, add cooked pasta, tomatoes and cheese and toss lightly to mix. 4. In small bowl, mix together pesto and olive oil then add the onion and lemon juice 5. Pour over pasta and tomatoes and carefully toss to coat. 6. Add salt and pepper. 7. Serve immediately or it can sit out a couple hours before/while serving, but it's best to not refrigerate, first. |
