This is a fun take on the Italian's Caprese Salad. These appetizers are sophisticated, flavorful and SO simple to make. Excellent for those watching their waitslines! Enjoy!!! Ingredients:
24 fancy toothpicks |
24 pieces 1-in cubed motzzarella cheese |
24 fresh sweet basil leaves, cleaned w/ stems removed |
24 small cherry tomatoes |
2 t. extra virgin olive oil |
1/2 tsp course sea salt |
Directions:
1. Put a tomato, basil leave (folded) and cheese cube on each toothpick in that order so the tomato is on top and the cheese cube is on the bottom.
2. Place appetizers on serving plate. Lightly drizzle with olive oil and sprinkle with sea salt.
3. Serve & enjoy!
